I’m going to replace the digitizer in my iPad Air and am wondering if I can take the old home button and put it in the new digitizer

Yes you can do that, but the price difference between a new digitizer with and without home button pre-installed is marginal~$1, I’d recommend getting the one with home button to save you some work.
