So I was faced with error code CE-34335-8 on a 1TB seagate SSD. Had tons and tons of games, and expensive saved data on it. I have since restored the original 500GB OEM drive and got the PS4 up and running again. Is it possible to view the corrupt drive on a Mac, and be able to restore some of the saved data from the corrupt drive and restore it to a working one?

No you can’t, unless you recover the entire SSD volume bit for bit. PS4 hard drive volumes are encrypted, making integrity check and recovery very difficult using regular software. Games can simply be redownloaded using the purchasing account. Most of the user profile data goes with your account so you don’t have to play everything again. If the save data is “expensive”, why don’t you back it up? Way to learn from an expensive mistake.
