Or are they separate components? Could you remove just the cellular antenna, or just the WiFi antenna, or are they one piece.
They are separate. They may just be traces on the board, depending on the model, but generally they are a ceramic antenna surface-mount component like this one: https://www.2j-antennas.com/antennas/sin…
